Salad with cods, leeks and gurkins, Salade de morue avec poireaux, pommes de terre et cornichons

Ingredients for 4:
A piece of salt cod (around 800 grams)
A few gherkins
4 to 6 leeks
new potaotes 800 grams
Olive oil,4 spoons
rice or honey vinegar, 2 spoons
mustard, 1 spoon
Mixed pepper
Salt

How to:

First, for at least 24 hours, unsalt the cod. Rinse, put in a bowl of water and regularly change the water.

Put milk and water in a pot big enough for the piece of cod. Bring the liquid to a boil. Put the cod in it for a few seconds. Drain and let cool.
Vapor cook the leeks and potatoes.
Meanwhile prepare the sauce. Mix the mustard, olive oil and vinegar in a small bowl. Add the gherkins cut in small pieces.

Break up the cod and put it in a salad bowl. Add the sauce. The cod will finish cooking and won’t be too dry.
Let the potatoes and leeks cool a bit and cut them in pieces, salt them lightly.  Add to the cod. Sprinke with a bit of pepper. Mix.

This salad is good lukewarm of cold.
